I could eat Banana Bread for breakfast, lunch and dinner. It’s sweet, but not too sweet, it’s filling and comforting, and especially good warm from the oven. My recipe contains unrefined sugar and a slightly healthier grain.

Far from being one of those awful paleo substitutions, Cauliflower Couscous actually originates from the kitchen of the great chef Ferran Adria. A useful addition to paleo cookery, it lends its fairly neutral flavour and slightly chewy texture as a decent stand in for grains. Here we mix the cauliflower with almonds, mint and pomegranate seeds to make an excellent accompaniment to our cumin lamb chops but you could leave it plain or add any bits that you wish. It would suit a little chopped crispy bacon really well.

Valentines Day is the perfect excuse to cook up a delicious meal and have a lovely relaxed evening with your favourite person. But, deciding what to cook can be a little stressful. So, I’ve come up with a super quick and easy dessert that will satisfy your sweet tooth without compromising on health!

When you think of ice cream you think of it as a treat rather than a nutritious dessert. So this ice cream is more like a frozen smoothie and a simple combination of fresh fruit and coconut oil (to help it set).

Fresh fruit has so many health benefits. I’ve used bananas and raspberries in mine, which are both bursting with vitamins, minerals and antioxidants, and because they are naturally sweet there’s no need to add any additional sweetener. Another berry could replace the raspberries if you wanted a variation.

The chocolate coating is dairy free and so simple. It’s a mixture of raw cacao powder, coconut oil and maple syrup. Cacao is labelled as a superfood… and quite rightly so. It’s packed with antioxidants, essential vitamins and minerals, heart health benefits, protein AND fibre!

Combine this with some coconut oil which is full of heart-healthy fats, and maple syrup (natural unrefined sugar), and you’ve got yourself some vegan chocolate.

The perfect dessert for Valentines or for any special occasion!
