Chocolate Mousse & Caramel Filled Easter Eggs
For a chocolate eggstravaganza this Easter, my chocolate mousse filled easter eggs, with an indulgent caramel centre will be a guaranteed winner with kids AND adults.
I use duck eggs instead of hen eggs as they have a wonderful white shell. Spray the outside with an edible gold spray for something really special.
For an adult only twist, add in a tsp (to taste) of Amaretto to the chocolate mousse once all the ingredients are combined.
Homemade Ferrero Rocher
The first of the May Bank Holidays are just around the corner, so I thought I’d share a delicious recipe for those of you having gatherings with friends and family. My absolute favourite chocolate is Ferrero Rochers – so I took upon the challenge of making my very own homemade ones. The advantage? The ingredients including; cacao, maple syrup, coconut flour and nuts are totally natural and free from gluten, dairy and refined sugars so that everyone can enjoy these yummy treats!
* Homemade chocolate takes minutes to make and is so satisfying! The health benefits are also abundant. Cacao butter offers a host of health benefits such as improved skin and hair, anti-ageing and reduces skin inflammation. A 100g also provides 44% of your daily nutrients and 40% of your daily vitamins.
* The cacao powder in the chocolate provides further essential vitamins, minerals, and antioxidants, along with healthy fats, protein, and fibre.
* Maple syrup is a fabulous natural sweetener – it comes directly from plant sap and has over 54 antioxidants helping prevent and delay diseases
* Coconut flour is a great alternative for gluten free diets. It is rich in dietary fibre, high in beneficial fats, and packed with protein. When using coconut flour, you need to consider the liquid quantity as it absorbs a lot more than other gluten free flours.
Gluten, Dairy Free & Vegan
Valentines Day is the perfect excuse to cook up a delicious meal and have a lovely relaxed evening with your favourite person. But, deciding what to cook can be a little stressful. So, I’ve come up with a super quick and easy dessert that will satisfy your sweet tooth without compromising on health!
When you think of ice cream you think of it as a treat rather than a nutritious dessert. So this ice cream is more like a frozen smoothie and a simple combination of fresh fruit and coconut oil (to help it set).
Fresh fruit has so many health benefits. I’ve used bananas and raspberries in mine, which are both bursting with vitamins, minerals and antioxidants, and because they are naturally sweet there’s no need to add any additional sweetener. Another berry could replace the raspberries if you wanted a variation.
The chocolate coating is dairy free and so simple. It’s a mixture of raw cacao powder, coconut oil and maple syrup. Cacao is labelled as a superfood… and quite rightly so. It’s packed with antioxidants, essential vitamins and minerals, heart health benefits, protein AND fibre!
Combine this with some coconut oil which is full of heart-healthy fats, and maple syrup (natural unrefined sugar), and you’ve got yourself some vegan chocolate.
The perfect dessert for Valentines or for any special occasion!
