Quinoa Stuffed Red Peppers – Vegan
(1/2 a pepper per person with salad is perfectly substantial for most)
Sometimes it’s nice to have a day or two away from meat and dairy. Therefore, these stuffed peppers will satisfy many with their rich flavour and are great for veggies. In fact, because quinoa is protein packed, you will stay fuller for longer which is often a difficult task with veggie options
I also include chia seeds within the quinoa mixture for additional protein and essential fatty acids.
Top tip: The vegan cheese sauce topping can also be used for Lasagne. Just add a touch more water or some unsweetened almond milk for a looser consistency.
Gluten, Dairy Free & Vegan
Valentines Day is the perfect excuse to cook up a delicious meal and have a lovely relaxed evening with your favourite person. But, deciding what to cook can be a little stressful. So, I’ve come up with a super quick and easy dessert that will satisfy your sweet tooth without compromising on health!
When you think of ice cream you think of it as a treat rather than a nutritious dessert. So this ice cream is more like a frozen smoothie and a simple combination of fresh fruit and coconut oil (to help it set).
Fresh fruit has so many health benefits. I’ve used bananas and raspberries in mine, which are both bursting with vitamins, minerals and antioxidants, and because they are naturally sweet there’s no need to add any additional sweetener. Another berry could replace the raspberries if you wanted a variation.
The chocolate coating is dairy free and so simple. It’s a mixture of raw cacao powder, coconut oil and maple syrup. Cacao is labelled as a superfood… and quite rightly so. It’s packed with antioxidants, essential vitamins and minerals, heart health benefits, protein AND fibre!
Combine this with some coconut oil which is full of heart-healthy fats, and maple syrup (natural unrefined sugar), and you’ve got yourself some vegan chocolate.
