Healthy Banana Bread

I could eat Banana Bread for breakfast, lunch and dinner. It’s sweet, but not too sweet, it’s filling and comforting, and especially good warm from the oven. My recipe contains unrefined sugar and a slightly healthier grain.

Enjoy as a healthy snack, stick a slice in the kids lunch boxes and enjoy with a good cuppa!


Banana breadIngredients 
*80 ml melted coconut oil or melted organic unsalted butter 
*120 ml date syrup (or honey/maple syrup)
*2 organic free-range eggs
*2 large ripe mashed bananas
*1.5 teaspoons baking soda
*1 teaspoon vanilla extract
*½ teaspoon Himalayan salt
*½ teaspoon ground cinnamon
*210 grams spelt flour (or whole wheat flour or buckwheat flour)
*Optional: 75 grams cup of chopped walnuts, pecans, or raisins
1.Preheat oven to 325 degrees Fahrenheit (165 degrees Celsius) and grease or line a 9×5-inch loaf tin.

2. In a large bowl, beat the melted coconut oil or butter and honey together together with a whisk. Add the eggs and beat well, then whisk in the mashed bananas. 

3. Add the baking soda, vanilla, salt and cinnamon, and whisk to blend. Lastly, switch to a big spoon and stir in the flour, until just combined. If you're adding any nuts or extras, gently fold them in now.

4. Pour the batter into your greased or lined loaf pan.

5. Bake for 55 to 60 minutes, or until a toothpick inserted into the center comes out clean Let the bread cool in the loaf pan for 10 minutes, then transfer it to a wire rack to cool for 20 minutes before slicing.
